I've heard good things about Jackrabbit mountain for a few years. I think I will check it out this summer. I see the campground there has tent sites close to the water. Has anyone stayed there? What's a good site to make reservations for? Or are there any cheap cabins nearby?

If you like fast, flowy, and scenic, Jackrabbit mtb trails are the bomb!  As for camping, the campground is right on the lake, with a dedicated swimming area.  Additionally, a new connector trail has just opened so that you can ride from the campground to the trailhead.  I'm not familiar with any cabins in the area, generally when my wife and I overnight there we stay at The Deerfield Inn.  It is located about 4-5 miles from the trails along US 64 near Hayesville.  It is an older, but nicely done motel that is operated by a very mtb friendly owner.
