I was wondering if you use a special software when you draw a trail or you just go to the area and decide on the spot.

Do you mean to flag out a route before building?

I do two things.  1.  Take an initial look at a good quality topo map to see the overall lay of the property.  The Mecklenburg Polaris3G site is really nice and gives both 10ft and 2ft countour lines.

2. I walk the property lines to get a feel for where I can and can't go.  Then I start walking the property in a grid.  I do a lot of scouting the property and both marking and making a mental note of positive and negative control points. (Rock outcrops, large and/or unique trees, swampy areas, water, cool over looks. All can be both positive and negative control points.)  Then I look for signs of water flow.  Where the water is coming from and going to.  Laying out and building trail is really about managing water flow.

Thanks! great tips. I was looking to build a trail in Italy next year with some friends there and I wanted to know from the pro here how they do.

You can overlay Topo Maps onto google earth.  Google Earth then also allows you to create paths.  Once created, Google earth also has a measurement tool that you could roughly trace your path out to see what kind of mileage/distance your path has.
