Reverse stem with my 26" and double reverse with the clown wheels. Square with red bike frame. Cheesy

Got ripped off on new build it is centered around the 40mm... I prefer anything over 75mm at least usally a 90

It really depends on how the frame was designed, doesn't it? You can adjust a little +/- for size and handlebar width preference, but some are intended to be super short (Mondraker, etc).

Buy size larger frame, mount handlebar directly to headset. No stem = less weight = more faster

Depends upon the frame, and the fit.

If I need more room I use a longer stem.

Bike handling is less of an issue, as long as you've got enough meat over the front tire.
