I'm considering getting a Fox Transfer dropper post and they come in 3 different travel lengths, 100mm, 125mm and 150mm. The travel is infinitely adjustable so is there any reason why you wouldn't want the longest travel option? My maximum riding height of my current seatpost is a little more than 7" above the collar. Are the shorter travel options intended for shorter riders or is there another reason to opt for less travel?

I think you can use the 150mm.  150mm=5.9" + 1in collar = 6.7in.   

125 is enough and would fit for sure, but the more drop the happier you will be.  Dropper posts are game changers...it will change your outlook on how to handle the bike on downhills.

Agreed. Ideally, you want to be able to adjust the dropper in the frame so that the fully extended position tops out at the highest position you would want it while riding.

Shorter travel may be necessary for shorter riders, or for bikes with odd seat tube shapes i.e. seat tubes with bends, kinks, thru-bolts, etc. that limit how far you could insert a seat post. 

If your plan is to get the longest travel dropper you can use based on your current max seat height, you better check first to make sure your frame will allow the seat post to sit deep enough into the seat tube.

You have to take into account the height of the dropper's collar as well. I run my saddle at 9" but can only use a 100mm dropper due to the height of the collar. You do not want a post that will not let you extend to fully without having your saddle too high.
