I try to at least once a week. Not much gravel proper in Charlotte area but I do conncet a few greenways and what not. Then there are the day trips we do to other areas.
  

Do what you like. Stop hating people for their riding habits and get back to hating them for their skin color, religion, politics, and sexual orientation.

URE for 50%/50% rides.  Love Valley near Statesville  you can 50/50 with bigger climbs.  Wilson Creek for the real deal... Its my jam these days.

I guess my previous reply isn't exactly "around Charlotte" but more destinations to specifically seek gravel.
Check out (You need to Login or Register to view media files and links); for not all known, but many known gravel road segments.
But really you can ride your gravel bike about anywhere.  Sometimes I ride the 9 miles from my house and do a few laps at Purser and go home for example.  It's almost a road bike and almost a MTB.  If you think Sherman is boring, try it in the drops for a new challenge.

weeklyrides.com has a collection of verified gravel routes in the area.  (You need to Login or Register to view media files and links)

Gravel map is good but isn't a complete list as it's user-generated info. So some of the routes may or may not be viable. 

The NCDOT GIS system has a list of NC unpaved roads mapped,

Unfortunately,  SC doesn't have GIS data available, that we know of.

Here is one I did recently out near Uwharrie. Not very long ride but the parking area is a boat launch for the reservoir so I brought my kayak and got in a nice paddle as well as a nice ride.  Cheesy
